I love coming in on a Monday morning and having a look through all the beautiful weddings that took place over the weekend. And when I saw Magnolia Rouge's post on a stunning Italian wedding, I simply had to share it!

The scenery is absolutely breathtaking (look at the stunning mountains in the background!!), while the bride's super cute gown – complete with embroidered black and white flowers – and braided hair are a perfect match for her gorgeous t-bar shoes! And how about the chapel! What an amazing place to be married in!

Cooking with Apples

Do you enjoy cooking with apples? Are you a partial to a warm apple crumble? Or does an apple tea cake take your fancy? What about apple pikelets? If you answered yes, then you will love these yummy apple recipes from soy.com.au…

Apple & Walnut Crumble with Custard

Preparation: 25 minutes | Cooking: 35 minutes | Serves: 4

Ingredients - CRUMBLE
• 2 ½ cups stewed apples (or 800g can pie apple)
• ¼ cup sultanas
• 1 cup rolled oats
• ½ cup wholemeal plain flour
• 2 tbsp brown sugar
• 2 tbsp dairy free margarine
• 2 tbsp honey

• 2 tbsp chopped walnuts
Ingredients - CUSTARD
• 2 tbsp custard powder (dairy free)
• 2 tbsp sugar
• 2 cups Vitasoy Calci-Plus
• 1 tsp vanilla essence

Instructions - CRUMBLE
Step 1
Preheat the oven to 180°C. Combine the apple with the sultanas and spread over the base of a medium sized ovenproof dish. Combine the oats, flour, and brown sugar in a bowl.

Step 2
In a small saucepan (or a bowl in the microwave) melt margarine and honey together, and then mix this through the oat mixture. Spread over fruit, sprinkle with walnuts and bake for 20-25 minutes or until golden brown.

Serve with custard.

Instructions - CUSTARD
Step 1
Mix custard powder or corn flour with a small amount of Vitasoy Calci-Plus to make a smooth paste. Combine remaining soymilk with sugar in a heavy based saucepan and cook, stirring, until nearly boiling.

Step 2
Add custard powder/corn flour mixture and bring to the boil, stirring constantly. Cook this for 1 minute. Add vanilla essence and remove from heat.

This recipe is: • Lactose free • Dairy Free • Vegetarian

Apple Pikelets

Serves: 4

Ingredients

• 300ml Vitasoy Protein Enriched Ricemilk
• 2 1/2 cups (320g) gluten free self-raising flour
• 2 tsp gluten free baking powder
• 1/2 cup (110g) caster sugar
• 2 tsp lemon juice
• 1 tsp vanilla essence
• 2 large eggs
• 50g dairy free reduced fat spread, melted, cooled
• 1 large green apple, grated (remove excess juice)
• Cinnamon, to dust

Instructions

Step 1
Sift the flour and baking powder into a bowl. Add the caster sugar. Stir well.

Step 2
Whisk together the Vitasoy Protein Enriched Ricemilk, lemon juice, vanilla, eggs and 1 tbsp of spread.

Step 3
Combine the ricemilk mixture, flour and apples until smooth. Stand for 5 minutes.

Step 4
Heat a frying pan on low. Lightly grease with the remaining spread. Pour 1/3 cup of batter and cook pikelets until lightly golden. Turn over and cover with a tight fitting lid.

Step 5
Cook for a further 2 minutes and remove. Repeat with remaining batter.

Serve sprinkled with cinnamon and drizzle with maple syrup.

Apple Tea Cake

Preparation time: 10 minutes | Cooking time: - 45 minutes | Serves 10

Ingredients
• 1 ¼ cups fine rice flour
• ½ cup soy flour
• ¼ cup tapioca flour
• 1 tsp bicarb soda
• 2 tsp baking powder
• 1 tsp xanthan gum
• 1 cup sugar
• 2 eggs, lightly beaten
• 1 ½ cups Vitasoy Soy Milky Vanilla
• 2 tsp vanilla essence
• 60g dairy free spread, melted
• 1 granny smith apple, peeled, quartered and cut into 3mm thick slices
• 1 Tbsp caster sugar
• 1 tsp ground cinnamon
Note: xanthan gum can be purchased in health food stores or in the health food section of major supermarkets.
Instructions
• Preheat oven to 180°C. Grease a 20cm springform tin.
• Sift flours, bicarb soda, baking powder, xanthan gum and sugar into a large mixing bowl.
• In a small bowl, combine eggs, Vitasoy Soy Milky Vanilla, vanilla essence and melted dairy free spread. Mix until well combined.
• Pour into sifted flours and mix well with a metal spoon until well combined and no lumps. Pour into prepared cake tin.
• Arrange slices of apple in a circular fashion over top of the cake.
• In a small bowl, combine sugar and cinnamon. Sprinkle evenly over top of cake until all used.
• Place in pre-heated oven and bake for 40-45 minutes, or until firm to touch and golden brown. Remove from oven, leave to cool on bench for 10 minutes then remove from tin and transfer to wire rack to allow to cool completely.

Remembrance Day 2011 - 93rd Anniversary of the Armistice

The hostilities of the First World War came to an end at the 11th hour of the 11th day of the 11th month, 1918 with the signing of the Armistice, and it is on this day that we remember our fallen soldiers. After the end of World War II, the name 'Armistice Day' was changed to 'Remembrance Day' and it remains a day where we honour the memory of those who died or suffered in all wars and armed conflicts throughout our history.

Each year the Department of Veterans’ Affairs produces a commemorative poster for Remembrance Day. This year’s Remembrance Day poster marks the centenary of the Royal Australian Navy (RAN), commemorated on 10 July 2011. The poster features a central image of an unidentified Petty Officer who had served at least three years at sea during the First World War. This is surrounded by contemporary images honouring the role and contribution of the Royal Australian Navy in Australian wartime history and its strength as part of the Defence Force today.

Since 1911, the RAN has played an important role both in Australia’s defence and on offensive operations. This began with ships of the RAN assisting in capturing German colonies in the Pacific during the First World War.

While the RAN lost no surface ships during that conflict, the Second World War proved more costly and involved Australian vessels in regular combat from the Mediterranean, through the Indian Ocean and into the waters around Southeast Asia and northern Australia.

In Korea, the RAN played a vital role, providing gunfire support for United Nations ground troops, attacking North Korean shore-based positions and employing the Fleet Air Arm in combat operations from the deck of HMAS Sydney.

During the Vietnam War, the RAN carried troops and provided gunfire against enemy targets on land. Today, members of the RAN are serving in operations in Afghanistan, the Sudan, the Middle East and East Timor, as well as taking in the task of protecting Australia’s borders.

Coconut Milk Ice Cream With Honey & Cinnamon

I came across this delicious recipe for coconut milk ice cream with honey and cinnamon on one of my favourite blogs… KORA Organics. This frozen treat is so delicious your friends and family won’t even know it’s a healthy alternative to regular ice cream.

Ingredients (Try to use certified organic ingredients whenever possible)
2 Cans coconut milk (full fat) or (1 can coconut cream and 1 can coconut milk)

½ Cup honey or agave (more or less to taste)

2 Tablespoons vanilla and/or cinnamon

Method

1. In a medium/large bowl (glass or stainless steel) whisk all the ingredients together until well combined. (Make sure the honey is fully blended with the coconut milk).

2. Cover with plastic wrap or a lid and place in the freezer.

3. Remove the bowl from the freezer every hour and mix with a fork andplace back in the freezer. The ice cream is ready when it is as thickand creamy as you desire which usually takes a few hours.

Note: You can also add raspberry, strawberry, or other fruit puree to the recipe. Just add ½ cup of fruit puree preferably with the seeds strained when you whisk the mixture. For other variations you can add ½ cup un-sweetened coco powder, nuts or dried cocnut.

Christina Hendricks Glitters in a Stunning Johanna Johnson Creation…

As the stars walked the red carpet at the 2011 Emmy Awards on Sunday night, it was nice to see a gown from one of our favourite Australian designers make an appearance on Mad Men star Christina Hendricks. And what a glittering appearance it was!

Created by Sydney designer Johanna Johnson, Christina Hendricks looked like an absolute goddess in the silk satin figure-hugging dress, embellished with Swarovski stones, glass and an intricate beading pattern designed especially to accentuate Hendricks' famous curves.

According to reports, the actress recently listed a Johanna Johnson beaded cape as one of her favourite fashion items, and after Johanna Johnson heard this, she set about creating a one-off custom gown especially for Hendricks in the hopes that she might consider wearing the gown on the red carpet. Johnson's leap of faith paid off, with Hendricks shining in the stunning eight kilogram gown on the night.

The exhibition will also feature wedding gowns by celebrated designers, including Vera Wang, Dior, Galliano, Lacroix, Vivienne Westwood and Lanvin, as well as gowns from fabulous Australian designers. Also on display will be the wedding gowns of Dita Von Tesse and Gwen Stefani.

Face

1. Flash photography emphasizes pink tones, so be sure to even out skin with a yellow-tones foundation.

2. Set concealer and foundation with Sheer Finish Loose Powder to make them longer lasting and to ensure that the skin looks matte in pictures.

3. If your dress has an open neckline be sure to warm your neck and chest with a dusting of Bronzing Powder.

Cheeks

1. For a pretty flush that lasts, use two shades of Blush: a natural shade and a brighter shade applied just on the apples of the cheeks.

Zucchini, Walnut & Cranberry Bread

Savoury breads have taken over from quiche as my perfect lunch snack!A savoury fruit-and-nut bread served with soft cheesesis the perfect lunchtime dish.

Ingredients
2 2/3 cups (400g) plain flour
1 tsp bicarbonate of soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp mixed spice
1 1/3 cups (295g) caster sugar
1/2 firmly packed cup (100g) brown sugar
3 eggs, beaten
200ml sunflower oil
2 tsp vanilla extract
3 large zucchini, grated
3/4 cup (75g) walnuts, toasted, chopped, plus 6 whole walnuts to garnish
1/3 cup dried cranberries (craisins)
Soft cheese (such as brie), to serve

Method
Preheat oven to 150°C. Grease and line a 2-litre loaf pan. Sift flour, soda, baking powder and spices into a large bowl. Stir in sugars, then add egg, oil, vanilla, zucchini, nuts, cranberries and a pinch of salt. Stir with a wooden spoon until well combined, then spread into the prepared pan. Top with extra nuts. Bake on middle shelf of oven for 1-1 1/4 hours or until a skewer comes out clean. Cool slightly in pan, then turn out onto a wire rack to cool completely. Slice and serve with cheese.

You won’t find simple sandwiches or scones with jam on this Italian style menu. Instead, cannoli, sweet pastries and pistachio clusters, frittata goats curd and cavalo nero. After a long and tiring day at our annual wedding styling shoot for our 2012 editions, we took the photographic team for a well-deserved evening of superb dining at the Southern Highlands' exciting new restaurant, Biota Dining.

Fine-dining at its best, Biota Dining is truly magnificent. The stunning 600-metre space has been transformed by the Viles family to a modern and aesthetically-pleasing restaurant that offers an intimate yet relaxed dining experience. With a focus on organic foods and local produce, the menu was nothing short of divine. While the roast lamb rump with garlic ash proved to be a favourite amongst the team, I opted for the mushrooms with artichoke, parsnip, pine nuts and nettles, and I must say, they were the BEST mushrooms I have ever tasted!

The meal was expertly matched with beautiful wine from local wineries, and we all thoroughly enjoyed finishing off our meals with the yummy caramel pear dessert.

A big thank you to the lovely staff at Biota Dining, we had a wonderful evening, and I will definitely be returning again for more of those amazing mushrooms!

Wedding photographer, Jerry Ghionis will receive the highest accolade in his profession tonight when he is awarded 2011 AIPP Australian Wedding Photographer of the Year by the Australian Institute of Professional Photography (AIPP) at a special gala dinner in Sydney.

Jerry, from Docklands in Melbourne, will walk away with $2,500 in prizes for his stunning images thanks to sponsor Lexar. In addition, Rocco Ancora, also of Victoria, will take home the 2011 AIPP Australian Wedding Album of the Year Award.

Winners of Australia’s most coveted professional photography awards will be announced tonight at the AIPP gala dinner held at Sydney’s Dockside restaurant at Darling Harbour and attended by over 350 of the nation’s greatest photographers.

‘The interest in the Canon AIPP APPAs continues to grow each year,’ says AIPP Executive Officer, Mr Peter Myers. ‘Again, the awards have received a record number of entries from photographers from around the country. This year more than 850 photographers submitted over 3,000 images in the competitive awards.’

Conducted by some of Australia’s most recognised photographers, judging for the awards took place over the past three days at the industry’s annual PMA Australia show. Each of the thousands of images entered is critiqued in detail by the esteemed judging panel.

2011 sees the addition of four new categories to the awards: advertising, fashion, architecture and fusion. ‘As the photographic landscape changes, we need to modify the categories to accommodate the volumes of work we are seeing in other areas,’ says APPAs Chairman and Judge, Peter Eastway.

‘The fact that photographers are embracing the video capabilities of their equipment saw the introduction of the new fusion photography category,’ continued Mr Eastway.

In their 35th year, the Canon AIPP APPAs attract a prize pool of more than $60,000 in cash and prizes including the grand prize – $20,000 worth of Canon EOS professional digital camera equipment.

‘To win the Canon AIPP APPAs is the highest accolade in Australian professional photography,’ says Taz Nakamasu, Managing Director, Canon Australia. ‘Creative photography is growing strongly in Australia, with 65% more images taken in the past four years alone, and it is the professionals who lead the way through their inspiration, passion and dedication to pushing the boundaries of their craft.’

The Canon AIPP APPAs are a celebration of photographic excellence and represent the pinnacle of Australian professional photography – also some of the best in the world.

Vegetarian Pizza

Friday nights are a great night to have a yummy pizza and a nice glass of red (after all, it is Friday and you have worked hard all week!)… Here's a fabulous vegetarian pizza recipe that is laden with delicious toppings - it's as yummy as it is healthy!

Ingredients (serves 6)
• 1 quantity Basic pizza dough (see related recipe)
• 1 teaspoon olive oil
• 1 small brown onion, finely chopped
• 1 garlic clove, crushed
• 1 small zucchini, coarsely grated
• 1/2 x 400g can diced tomatoes
• 1 tablespoon shredded fresh basil leaves
• 1/2 medium red capsicum, thinly sliced
• 1/2 medium green capsicum, thinly sliced
• 4 (120g) bocconcini cheese, sliced
• 1/2 cup grated reduced-fat mozzarella cheese

Method
1. Make pizza dough. Place base on a greased baking tray. Preheat oven to 240°C/220°C fan-forced.
2. Heat oil in a saucepan over medium heat. Add onion, garlic and zucchini. Cook, stirring, for 5 minutes or until onion has softened. Add tomatoes. Bring to the boil. Reduce heat to mediumlow. Simmer for 5 minutes or until sauce has thickened. Add basil. Stir to combine.
3. Spread pizza base with tomato mixture. Top with capsicum, bocconcini and mozzarella. Bake for 15 to 20 minutes or until cheese has melted and base is crisp. Serve.
