Healthy Salad

I just love eating healthy salads for lunch and I am always on the lookout for simple, yet tasty salad recipes. I found this great recipe on Prevention, and thought I would share it with you. Full of leafy greens, it's perfect for vegetarians…

  • 1 tbs honey
  • 1 tbs Dijon mustard
  • 1⁄2 tsp minced garlic
  • 1⁄4 cup + 2 tbs olive oil
  • Pinch of salt
  • Freshly ground black pepper
  • 6 cups lightly packed watercress, tough stems removed
  • 3 cups lightly packed torn radicchio
  • 1⁄4 cup flaked almonds, toasted
  1. Whisk vinegar, honey, mustard and garlic in large bowl. Add oil in a stream, whisking. Season with salt and pepper to taste.
  2. Add watercress and radicchio and toss to coat. Divide greens among six salad plates and top each with 2 tsp of the almonds.
