Veronica & Shadi's Grilled Mediterranean Vegetable and Haloumi Salad



I just love a great vegetarian recipe and I can't wait to try this one from the My Kitchen Rules winners…

Ingredients

  • 2 medium eggplants, sliced lengthways 1cm thick
  • Salt flakes
  • 2 zucchinis, sliced thinly lengthways
  • 1 red capsicum halved and sliced
  • 1 yellow capsicum halved and sliced
  • 1 red onion halved and thickly sliced
  • 800 g Kent Pumpkins, peeled and thinly sliced
  • 4 cloves garlic sliced.
  • 300g haloumi cheese, sliced
  • 2tbs balsamic vinegar
  • Cracked black pepper

Method

Sprinkle salt generously over eggplant. Allow to stand for 15 minutes.
Meanwhile grill vegetables in batches on an oiled hot grill plate for about 2 min each side or until almost tender. Set aside and repeat with remaining vegetables.
Transfer to a large oven proof baking tray
Grill haloumi for 1 min each side and add to vegetables
Drizzle over balsamic vinegar
Season with salt and pepper
Cook in moderate oven (180) for 15 minutes or until vegetables have cooked through. Served on a large platter with grilled bread.
