Veronica & Shadi's Grilled Mediterranean Vegetable and Haloumi Salad

I just love a great vegetarian recipe and I can't wait to try this one from the My Kitchen Rules winners…


  • 2 medium eggplants, sliced lengthways 1cm thick
  • Salt flakes
  • 2 zucchinis, sliced thinly lengthways
  • 1 red capsicum halved and sliced
  • 1 yellow capsicum halved and sliced
  • 1 red onion halved and thickly sliced
  • 800 g Kent Pumpkins, peeled and thinly sliced
  • 4 cloves garlic sliced.
  • 300g haloumi cheese, sliced
  • 2tbs balsamic vinegar
  • Cracked black pepper


Sprinkle salt generously over eggplant. Allow to stand for 15 minutes.
Meanwhile grill vegetables in batches on an oiled hot grill plate for about 2 min each side or until almost tender. Set aside and repeat with remaining vegetables.
Transfer to a large oven proof baking tray
Grill haloumi for 1 min each side and add to vegetables
Drizzle over balsamic vinegar
Season with salt and pepper
Cook in moderate oven (180) for 15 minutes or until vegetables have cooked through. Served on a large platter with grilled bread.

Your Outdoor Wedding

I am very excited about the weekend as I will be attending one of the BD Team's weddings and thankfully the weather is set to be just perfect for her outdoor celebration. So I thought today I would share with you our thoughts on planning the ultimate outdoor wedding, so you can be sure that you've covered every angle and your outdoor wedding will go off without a hitch…

Your wedding ceremony can be held just about anywhere you would like – and many couples opt for the great outdoors, either at the beach, on a river bank, in a park, vineyard, or garden, or on the sparkling waters of a harbour for an unforgettable wedding cruise. Be creative with the location.

This is a once in a lifetime event and you should choose a venue that is beautiful and meaningful to you both. Here in Australia we are truly blessed with the variety of outdoor locations that are perfect for weddings. Some brides and grooms enjoy the freedom of a beach wedding, while other water lovers opt for a specially chartered cruise vessel.

If you prefer to have your feet on terra firma, consider the romance of a beautiful country garden, an orchard, a vineyard, or a magnificent botanical garden. Depending upon the time of year, you could exchange your vows surrounded by lush greenery, the delicate pink and white of spring blossoms, or autumn’s vibrant reds and golds.

When planning any outdoor wedding, there are a few logistics to consider. For example, you will need to select a spot that is reasonably easy to access, particularly if you have very young children or older relatives among your guests. You should also discuss your plans with your marriage celebrant, as well as with your photographer, videographer and the musicians you have hired to play at the ceremony so that they can make any special arrangements that may be necessary.

Parking is another factor that shouldn’t be overlooked. Is there adequate parking within easy walking distance to the spot you’ve chosen? If not (and you have your heart set on this particular location) you may be able to arrange for your guests to gather somewhere close by and hop on a bus that you’ve hired to transport them to and from the wedding. This could add a fun ‘mystery tour’ element to the day – but allow plenty of time for this manoeuvre to be carried out successfully!

If your chosen wedding venue is a public space, you may need to obtain permission for its use from the relevant authorities. And no matter what location you choose, be sure to give your guests clear directions on how to get there, as well as advice on suitable dress and footwear.

Are both your wedding and reception to take place at the same location? Then you’ll probably need to investigate the hire of a marquee for your reception. A marquee is a flexible and creative option. 

They can be erected just about anywhere (as long as you have permission) and can be decorated anyway you choose. However, if there are no kitchens nearby you’ll need to hire a fully equipped caterer’s tent and possibly a generator, as well as arranging for access to fresh water. Discuss this with your caterers, who may be able to give you some useful advice.

Finally, while an outdoor wedding can be a wonderfully romantic and relaxed celebration, always choose an alternative indoor venue as back up in case of bad weather.

Australia's First Teenage Disabled Marriage Celebrant

We received this press release from a very proud mother, and I simply had to share this with you all…

James Davies is 19 and has Spastic Quadriplegia Cerebral Palsy as a result of being born prematurely, 14 weeks early. Despite being permanently confined to an electric wheelchair, James is a very talented young man and 2009 was a huge year for James.

On February 24th 2009 James underwent major 9 hour spinal fusion surgery, where a series of titanium rods were used to correct his scoliosis.

Recovery from the operation usually takes around 12 months; however after 5 months James was beating the odds and eager to begin studying again to help him “get back into the groove” before returning to TAFE to finish his Diploma in Business.

After attending his cousin’s civil wedding ceremony, James thought he might investigate becoming a Marriage Celebrant. A few days later, he hopped on Google and found an online course with the Academy of Celebrancy Australia which mentioned a software package called Celebrant Express that produces all the marriage certificates electronically and allows the user to print them out on their home printer, eliminating the need for copious amounts of handwriting (handwriting is a challenge for James). All the Celebrant has to do is enter the data into the computer, generate the forms using the software, print the forms out and sign them. Therefore, James enrolled in the online course and passed all activities with flying colours, whilst completing his Diploma at Central TAFEWA. Effectively, James was completing two full-time courses – a mammoth task for anyone – let alone someone with a disability.  James is articulate, tech-savvy and is able to sign his signature, so I have no doubt that James will be able to provide an outstanding service to couples who wish to marry.

James is an inspirational guy, and has faced many obstacles over the course of his life, always with a smile on his face and an amazingly positive attitude.  He is very ambitious and has just enrolled in Curtin University to study Commerce. Furthermore, he is planning a tour to Melbourne for a group of disabled people from around the country, which he hopes will transpire in December this year, as well as co-authoring a manuscript over the internet with a girl in New Zealand who is his ‘pen pal’ (She too has Cerebral Palsy). Remarkably, the pair has never met in person, although the story they are writing will be an absolute thriller! Their manuscript is in the hands of an editor at the moment and they are due to send it to a Literary Agent in April.

James’ goal is to be Australia’s first teenage disabled Marriage Celebrant to marry a couple, meaning he would very much like to solemnise a marriage before he turns 20 on July 3rd, 2010.

About a month ago James registered his business name, Cape Diem Celebrancy Services. Carpe Diem is a Latin phrase translating to ‘Seize the Day’. Seizing the day is exactly what James has done every day of his life, making every post a winner. I thought James’ story may interest you. I hope that you might be able to assist James in attracting some clients before he turns 20, to ensure, he is, in fact, Australia’s first Teenage Disabled Marriage Celebrant to solemnise a marriage. Oscars 2010

I love watching the Oscars, and while yes, I am interested in the movies, I have to be honest, it's the fashion that pulls me in each year… 

And this year was no exception, the gowns were simply stunning, and I wanted to share with you my top 5 gowns.

1. Diane Kruger in Chanel.
The combination of nude and black was just gorgeous, and I loved the layering of fabric around the middle.

2. Sandra Bullock in Marchesa
The metallic colour was stunning against Sandra's complexion, and her hair was perfect - simple and sleek.

3. Sarah Jessica Parker in Chanel
Such an ethereal beauty, Sarah Jessica Parker looked amazing in Chanel. Superb.


4. Cameron Diaz in Oscar de la Renta
Again, the metallic hue was a fabulous colour choice for Cameron's golden complexion. I love the folds of the skirt at the back.

5. Rachel McAdams in Elie Saab
